Playa Camino is Doc’s riff on a paloma. The Paloma is one of Mexico’s most popular cocktails. There, they mix blanco tequila with a very sugary Mexican grapefruit soda. In the US, most palomas are made with pulpy grapefruit juice and soda gun club soda leaving the drink extra bitter and, in most cases, flat. Doc’s Playa Camino starts with an all-natural grapefruit soda made from all-natural ingredients and full carbonation giving his paloma full flavor without being overly sweet. Nothing artificial. You should get a big grapefruit aroma in the nose with hints of tequila. Your first sip should have a big full grapefruit flavor up front, followed by subtle tequila in the middle, and then a nice clean finish. Every other sip after that should mellow out with time. To mellow it out even further, pour over ice and/or garnish with a lime.
